VAN CANIRAC Y LA UDEG POR COOPERACIÓN EN PROYECTOS GASTRONÓMICOS
Con la firma del Presidente Nacional de la Cámara Nacional de la Industria de Restaurantes y Alimentos Condimentados (CANIRAC), Germán González Bernal y del Rector General de la Universidad de Guadalajara (UdeG), La CANIRAC Delegación Jalisco y la UdeG este viernes signaron un convenio de colaboración con el objetivo de crear un ecosistema de cooperación donde confluyan la comunidad académica, estudiantil y toda la industria restaurantera en su conjunto.
El presidente de CANIRAC Jalisco, Mario Alberto Ávalos Gonzáles resaltó que la finalidad del convenio es generar inteligencia de negocios, definir la identidad de la gastronomía de Jalisco con perspectiva científica, proyectar la potencia gastronómica de Jalisco a nivel nacional y mundial, así como desarrollar cultura empresarial y buenas prácticas en la industria con el involucramiento de la comunidad universitaria, en particular, la de la relacionada con investigación y gestión de negocios gastronómicos.
En conjunto, las instituciones ofrecerán recursos y oportunidades de networking para los miembros de la industria restaurantera, así como de la comunidad académica y estudiantil. Asimismo, los estudiantes podrán tener un acercamiento real y práctico a la industria restaurantera y su funcionamiento mediante la elaboración
de distintos proyectos conjuntos.
Durante el evento, se destacó que la colaboración entre CANIRAC Jalisco y la Universidad de Guadalajara, la cual es fundamental para el crecimiento y el fortalecimiento de la industria restaurantera en Jalisco, ya que la firma de este convenio sentará bases para impulsar un gremio innovador y altamente competitivo.
Ávalos Gonzáles destacó que el sector de servicios de preparación de alimentos de Jalisco es el segundo más grande a nivel nacional, pues aporta el 9% de los negocios restauranteros en México, un sector que sigue en recuperación tras la pandemia por la COVID-19, pues en 2022 tuvo un crecimiento económico de 50% en comparación con 2021.
En tal contexto, se valora importante la cooperación que hoy inicia para la industria restaurantera de Jalisco, al respecto, Mario Ávalos comenta: “este convenio permitirá a las y los restauranteros tener acceso a recursos que les permitan mejorar sus capacidades y estar a la vanguardia en la industria. Además, permitirá la colaboración entre la academia y la industria, lo que siempre es positivo
para el desarrollo de cualquier sector”.
Con esta iniciativa, la CANIRAC Jalisco da pasos contundentes al frente para movilizar a la industria restaurantera y crear oportunidades que faciliten la proyección de escenarios de crecimiento, expansión y modernización de la industria local, proceso que implica su activa participación en la educación, la cultura y la ciencia.
